    Best built smoker that I could find. Vermont castings reputation was also a plus. Too bad the smoker does not work well. I didn't buy the smoker until I read the break-in procedure that stated to heat the smoker to 125 deg. for 45-60 minutes. That made me believe that the smoker would really work great at 200 - 220, the recommended temp. for smoking low and slow and the temp that I have smoked at with wood smokers for over 15 years. The owner's manual states best temp. for cooking is 220 - 250 deg, which I could live with. It turns out that maintaining low temperature is impossible to do. Within 20 minutes, the smoker's temperature climbs to 270 deg. no matter what you do to the dampers and that is at the lowest burner setting. I have never left the door closed long enough to see how high the temp would climb to because I did not want to ruin the food. [...]. Do not buy this for a smoker. If you want an outdoor oven that cooks around 300+ deg. then this is probably a good buy.
