The unique 10° angle on our new line of Shun knives is the result of the collaboration between Kershaw's own blade smiths and star of the Food Network's Good Eats show, celebrity Alton Brown.

Alton loved the sheep's foot blade shape on the Shun Vegetable Knife, but had trouble using it because his knuckles kept hitting the cutting board. So he asked Kershaw for a modification-a small angle that would let him both firmly grasp the knife and fully contact the cutting board.

In fact, it worked so well that now there are a half-dozen Alton's Angles blades. Not only does the design keep knuckles off the cutting board, but the natural curve created between the blade and the user's arm makes controlling the blade even easier and more precise.

  • VG-10 stainless steel is clad with 16 layers of SUS410 high-carbon stainless steel on each side, producing a 33-layer rust-free Damascus look with a Rockwell rating of 61
  • VG-10 "super steel" is composed of Carbon, Chromium, Cobalt, Manganese, Molybdenum, Silicon, and Vanadium
  • Shun Classic feature Ebony-black Pakkawood handles

My husband and I bought these to replace our Wusthof collection (which was perfectly fine, btw). I had used these knives at a friend's house and instantly noticed that they were more balanced than my Wusthof -- and this is not to mention that they are super stylish! Sharpness is about the same, but if you're looking for precision handling, these are for you.

ok, get this knife if you like cook and you will no longer hit your knuckles on the cutting board again. Good size and shape for my hand. Want to get a few more for my friends!
