Comments about Nordic Ware Gingerbread House Mold:

I bought this mould three years ago and have made it successfully every Christmas. The mould is finely detailed and the biscuit bakes evenly and the definition comes out cleanly. I have never had any problems with the cooked dough unmoulding cleanly. I "build" the house with ready to mix royal icing which acts both as mortar for the biscuit sides and roof and as snowy decoration. I admit to using a soy sauce bottle inside the house to keep the roof upright while the icing set (this was the only thing I had to had that was the perfect size). The fun bit is using a selection of coloured sweets and candy canes and ready to use white and coloured icings to decorate. I sometimes add some extra trees in the "garden". You do need to find a large cake board which I found at a specialist cake decorating shop - the ones in the supermarket were too small. I lost the original recipe and use my own basic biscuit recipe which works fine - equal quantity of butter & sugar creamed, one egg beaten in and double quantity of plain flour(a little vanilla and mixed spice too). This is not true gingerbread but my kids don't like gingerbread and this looks the part and tastes good. By New Year the biscuit is rather soft, but the kids still eat it! Finally, baking the house is quite time consuming, as you need to bake one side twice and the other side once (waiting for it to cool each time). Sometimes I bake it in part and then freeze it and take it out of the freezer when I'm ready to decorate.
